How to Make Croquetas – Spanish Croquettes

Ingredients

  • Four tablespoons of unsalted butter
  • One tablespoon of onion – finely chopped
  • One cup of whole milk
  • One cup of all-purpose flour – divided
  • ¼ teaspoon of nutmeg
  • Salt and pepper to taste
  • One pound of ground ham
  • One tablespoon of cooking wine
  • Two large eggs
  • One cup of breadcrumbs – grounded
  • Vegetable oil for frying

Instructions

  1. Melt butter in a saucepan over medium-low heat
  2. Add onions and cook for 1-2 minutes
  3. Whisk in milk, nutmeg, salt, and 1/3 cup of flour
  4. Don’t forget to add the pepper
  5. Add the cooking wine and ham to the whisked ingredients
  6. Reduce the heat and simmer for 5-6 minutes
  7. Transfer the filling to a bowl and set aside or refrigerate
  8. Remove the filling from the fridge or freezer
  9. Create logs 3 inches long and one-inch wide
  10. Add breadcrumbs to prevent stickiness
  11. Place all logs in the refrigerator for 30 minutes
  12. Whisk eggs and set aside
  13. Use another bowl to mix the breadcrumbs and flour
  14. Remove the logs from the fridge and dip each one in egg
  15. Now coat the log in flour-crumb mixture
  16. Repeat the step until you have covered or coated all logs
  17. Heat vegetable oil in a large-sized pan or pot
  18. Cover the logs in the oil and heat for 3-4 minutes
  19. Remove the logs from the oil and place them on a paper-lined plate
  20. Serve with lime wedges and saltines
  21. Enjoy the delicious croquettes
