How to Make Migas – Scrambled Bread

Migas is one of the most delicious and traditional Spanish dishes made with leftover bread. Although you can find Migas in various restaurants, it is a household dish popular in rural areas. Here is the list of ingredients and instructions to make Migas, also known as scrambled bread. Read on!

Ingredients

  • Four cups of fresh breadcrumbs
  • One cup of olive oil
  • 7 ounces of sliced bacon
  • Two slices of bread – cut them into cubes
  • One tablespoon of paprika
  • One clove of minced garlic
  • Salt to taste

Instructions

  1. Use a moist cloth to wrap breadcrumbs for eight hours or overnight
  2. Heat oil in a saucepan when you are ready to cook
  3. Heat the oil over medium heat
  4. Add bacon to the oil and cook for seven minutes
  5. Use a slotted spoon to remove the bacon
  6. Place it on a plate lined with a paper towel
  7. Add bread cubes to the oil and stir or cook until browned
  8. Stir in breadcrumbs, garlic, paprika, and salt
  9. Cook for a few minutes and remove from heat
  10. Mix all ingredients and serve the delectable Migas

Note: you can use serrano ham instead of bacon. Although most people use bacon, you can substitute serrano ham for it if you don’t like it. All other ingredients remain the same!
