  • Ten ounces of white beans

  2. Drain the beans the next day and add them to a large pot

For Tortilla chips

  • 500 grams of corn tortillas

  • Salt to taste

Additional features require

  • Fresh cream to taste
  • 150 grams of grated cotija cheese
  • Two avocados
  • Four teaspoons of chopped coriander


  1. Cook the oxtail together with the vegetables for approximately one hour and 15 minutes
  2. Tate the vegetables and chilies and crush them with salt and cumin
  3. Add a little of the liquid in which you cooked the tail
  4. Cut the tortillas into triangles and fry until crispy
  5. Add salt to taste, and you will have some delicious tortilla chips ready
  6. Separate the meat from the tail bones and shred it
  7. Put a tablespoon of lard in a pan and add the can of beans
  8. Mash them with a fork until you get a creamy paste.
  9. Make the eggs in a pan, either grilled or fried.
  10. In a frying pan, brown onion with a bit of oil and add the red sauce you have prepared to finish flavoring it
  11. Heat your tortilla chips in a pan and mix them with the meat.
  12. Grate some cotija cheese on top
  13. Add your hot sauce to mix it all up.
  14. Serve them with half an avocado and one egg per serving
  15. Add two to three tablespoons of refried beans on the side
  16. Add fresh cream and more cheese on top.
  17. Top with chopped cilantro.

  • One tablespoon of olive oil
  • One chopped onion
  • One teaspoon of paprika and dried thyme
  • 300 grams of paella or risotto rice
  • Three tablespoons of white wine or dry sherry – optional
  • 400 grams of chopped tomatoes with garlic
  • 900 milliliters of chicken stock
  • 400 grams of frozen seafood
  • One lemon – half cut into wedges and half juiced
  • A handful of parsley–chopped


  1. Add olive oil to a large frying pan
  2. Now add the onion to the frying pan and heat for five minutes
  3. Add paprika, paella rice, and thyme
  4. Stir for at least one minute
  5. Add the sherry if using
  6. Stir in the chicken stock and chopped tomatoes
  7. Cook for 15-20 minutes
  8. Stir again until the rice is tender
  9. Stir in seafood mix and simmer for five minutes after covering with a lid
  10. Squeeze over the lemon juice and garnish with parsley
  11. Serve with lemon wedges
  12. Enjoy the delicious Spanish rice
