How to Make Fabada – Broad Beans And Pork Stew

Ingredients

  • Ten ounces of white beans
  • Thirteen ounces of ham hock
  • Four to five ounces of Spanish chorizo
  • Four ounces of slab bacon
  • Four cups of water
  • One bay leaf – optional

Instructions

  1. Soak the beans in water for 12-15 hours or overnight
  2. Drain the beans the next day and add them to a large pot
  3. You can also use a Dutch oven
  4. Add the chorizo, ham hock, and bacon
  5. Pour over the water and add bay leaf
  6. Cover the pot and bring to a boil
  7. Reduce the heat and remove foam from the top
  8. Simmer the ingredients for two hours
  9. Stir from time to time to prevent sticking
  10. Once cooked, remove from the heat
  11. Now remove bones, skin, and fat
  12. Next, dice the bacon and ham
  13. Slice the chorizo
  14. Remove excess fat from the pot with the beans
