How to make Kuzu Tandir: Lamb Delicacy
Kuzu Tandir is a lamb delicacy and one of the most delicious foods in Turkish cuisine. The reason is that the lamb is tender, fragrant, and melts in your mouth like cotton candy. So, let us tell you how to make this mouthwatering lamb delicacy.
Ingredients
- One leg of lamb
- ¼ cup of olive oil
- One or two tablespoons of lemon juice – freshly squeezed
- One teaspoon of salt
- A half teaspoon of ground black pepper
- Five bay leaves
- Three sprigs of fresh rosemary
- A half cup of hot water
Instructions
- Preheat your oven to 285 degrees Fahrenheit
- Place the lamb in a metal oven tray
- Whisk olive oil, spices, and lemon juice in a bowl
- Apply the mixture to the lamb
- Rub the mixture over the lamb
- Add rosemary springs and bay leaves
- Place the tray in the oven
- Cook the lamb at low heat for two hours
- Turn the lamb pieces over after 30 minutes
- Pour a half cup of hot water over the lamb
- Use aluminum foil to close the roasting pan
- Turn the oven heat to 365 degrees and let the meat roast for one hour
- Remove from the pan and set aside for five minutes
- Remove the foil and use two forks to remove meat from the bones
- Remove rosemary and bay leaves
- Serve the dish with potato puree
