How to Make Fabada – Broad Beans And Pork Stew

Ingredients
- Ten ounces of white beans
- Thirteen ounces of ham hock
- Four to five ounces of Spanish chorizo
- Four ounces of slab bacon
- Four cups of water
- One bay leaf – optional
Instructions
- Soak the beans in water for 12-15 hours or overnight
- Drain the beans the next day and add them to a large pot
- You can also use a Dutch oven
- Add the chorizo, ham hock, and bacon
- Pour over the water and add bay leaf
- Cover the pot and bring to a boil
- Reduce the heat and remove foam from the top
- Simmer the ingredients for two hours
- Stir from time to time to prevent sticking
- Once cooked, remove from the heat
- Now remove bones, skin, and fat
- Next, dice the bacon and ham
- Slice the chorizo
- Remove excess fat from the pot with the beans
- Add the chopped meat again and mix it with the beans
