How to Make Tortilla Espanola – Spanish Omelet

Ingredients
- One tablespoon of olive oil
- Two large potatoes – sliced
- ¼ teaspoon of paprika – optional
- Salt and pepper to taste
- One sweet onion – sliced
- One teaspoon of olive oil
- One bunch of parsley – fresh and chopped
- One tablespoon of olive oil
Instructions
- Preheat your oven to 350 degrees Fahrenheit
- Heat one tablespoon of olive in a skillet
- Place the potatoes in the oil
- Use salt and pepper for seasoning
- You can also use smoked paprika
- Fry the potatoes for eight minutes
- Fry the onions for ten minutes
- Remove the skillet from heat and set aside
- Now beat eggs with one teaspoon of oil in a bowl
- Stir in potato-onion mixture and parsley
- Heat one tablespoon of olive in a skillet
- Add egg-potato mixture to the hot skillet
- Reduce the heat to low and shake the skillet to preventing sticking
- Slide the skillet into the oven and bake for five minutes
- Remove from oven and cut the omelet into pie-shaped pieces
